Love these type of matches. I do a similar competitive rule set but you have to win by making them submit while sitting on their face.
The thing you have to control for are other submissions. So there has to be some sort of penalty if they tap in another hold. For me, you get a free 30 second face sit but you could do something similar for head scissors.
